Within high-volume restaurant models like The Cheesecake Factory and TGI Friday's, Dan developed his operational foundation which he then applied to the eatZi's Market & Bakery brand, a $60M per year hybrid restaurant-retail operation. As Vice President of Operations at eatZi's, Dan led the team, participated in setting strategy and was directly responsible for systems leading to profitability.

Dan's high-volume operational expertise could only come from feet-on-the-ground experience: experience like directing The Cheesecake Factory's Management Training and Development Department where he championed and evolved the program that trained 110 managers and kitchen managers.

Among the financial fine tuning that Dan did while at eatZi's Market & Bakery was a revamp of the entire labor model. Dan led his efficient team to create a scalable labor system and because of his commanding leadership, was able to drive profit through labor management.
