Choice Hotels International retained VSAG to develop the menu, recipes, brand-related service systems, and operational systems for the food and beverage operation of Cambria Suites. A “soup to nuts” engagement, VSAG has ongoing responsibility for creating and evolving the full menu, recipes, kitchen operations procedures and the entire operational manual and operating system for the concept. In addition to development and support, VSAG operators were on the ground at each the openings to ensure smooth operations.
The transformation of Cambria Suites included such innovations as chef-crafted sandwiches, salads, and a selection of organic soups as well as a full-service bar, Wolfgang Puck barista bar, and chef-selected buffet menus. The result: a hotel where the guests can truly relax, and take comfort knowing that the food they eat will be real, delicious, and available 24 hours a day.
The Cambria Suites brand is poised both to revolutionize and dominate its niche of focused-service hotels and anticipates explosive growth of 100 hotels by 2010.
